Snack Time: Peanut Butter Granola Bars

I like to snack. A lot. Seriously. This can mean big trouble for me because, for the time being, I work from home. So, what/who is to stop me from strolling into the kitchen every time I start getting a little bit bored staring at my computer screen? No boss within thousands of miles counting how many times I get up. No co-workers commenting on my horrid snacking habits. Oh, and having Trader Joe’s and their amazing snack foods a 5-minute walk away from my apartment doesn’t help either.

Today I decided I wanted to try making my own snacks and I found a recipe for granola bars. Peanut butter granola bars. Another thing you may not know about me is that I will eat pretty much anything if you tell me peanut butter is involved. I am a big, big peanut butter fan. Peanut butter, coupled with the fact that I’ve never heard of anyone making their own granola bars, convinced me I absolutely needed to make this. Time for a work break! Shhh, don’t tell.

Here are all the ingredients you’ll need. And um, yeah, it is clear that they pretty much all came from Trader Joe’s, my home away from home. If I could move into that store I would. I’d probably sleep in the wine section. Or maybe next to the pre-cut apples.


The granola bar recipe I used called for peanut butter (1/2 C), oats (1/2 C), almonds (1/2 C), and dried cranberries (1/2 C). But after I made them, I realized the possibilities are endless. Chocolate chips? M&M’s? Butterscotch chips? I can think of a million ways to make granola bars a less healthy snack. Oh, and I will be experimenting in the future.

First, you want to mix the oats, cranberries, and almonds in a bowl. Then, over low heat, mix the vegetable oil (3 T), peanut butter (1/2 C), brown sugar (1/2 C), cinnamon (1/2 t), salt (1/4 t), and water (1 t) until the sugar has melted.Then stir in the egg white until well blended. And pour into the oat mixture.


Then spread it in a pan with parchment paper on the bottom. If you don’t have parchment paper, you probably don’t need it. Just butter or oil the pan so the granola bars come out and aren’t a sticky mess. I hate when that happens.


The recipe says to bake them for 30 minutes at 300 degrees, but I kept them in the oven for 35 minutes and might even have gone a little longer to make them a bit crunchier. Mine were definitely soft. But soo soo good. Make sure they’re entirely cooled before you cut them. Ahem, I did not.


I quickly learned that I may as well just carry the whole plate of granola bars to my work area instead of getting up every 5 minutes to go back into the kitchen for more. See? I’m super smart when it comes to time management. And snack control. Right. OK, back to work.

Fit N Fresh for President

For some reason I really like bringing my lunch to work. It could be that I work in the Back Bay and so close to some of Boston’s best restaurants and it saves me tons of money by not eating out, or it could be that the food I bring distracts me from… actually doing work… and wakes me up if I start to space out. hehe. Either way, having food at my desk from 9-5 offers some sort of entertainment value for me, gives me something to look forward to, and it makes me happy when I know I have something to snack on to get me through the day. And I love when it’s really organized in nice little containers :)

Several months ago I bought a “Lunch on the Go” by Fit N Fresh (from Target obviously), and I literally fell in love with it. I’d marry it if I could. There are containers within containers with ice packs to keep your food chilled for up to 6 hours.

After that I decided I obviously needed the “Fresh Start Breakfast Chiller”… [I really had no reason to buy it since I never ate anything that required a bowl while I was at work]… naturally I had to start eating “liquidy” breakfast foods since now I had a really cool bowl. So I started bringing oatmeal and blueberries to work every morning :) Yes, I am fully aware that my train of thought is totally backwards. Here’s the bowl:

Last week I was hanging out with my sister… at Target… and I saw the Fit N Fresh “Salad Shaker.” Had to have it… obviously bought it. There were also little snack stackers too (they were only $3.99 and it would have been silly of me not to buy them… so I did). I also convinced my sister to buy the “Salad Shaker”… she loves it! There’s a little compartment on the lid to store salad dressing and when you’re ready to eat, you turn the yellow knob on the lid and it releases your dressing into the salad! Here’s my lunch for tomorrow:

Haha… love it.

All of the Fit N Fresh containers have units of measure on them so it’s perfect if you’re trying to watch serving sizes… clearly I’m not since everything is filled to the brim :P

These containers are also quit a hit in the office. I’m pretty sure there have been times when I’ve had all of my Fit N Fresh containers on my desk… at one time. Some of my co-workers have even asked for “demos” of them.

It’s a great way to break up the hectic work day! :)
