Linda- I replied to your email. I'm not sure why you didn't receive it. But I will paste my original response below:

To be honest, I don't know why you're experiencing such problems with the pancakes. I made them over a year ago and wrote the recipe exactly as I made them. I remember them being delicious and don't know why yours aren't coming out if you're doing the same thing i did!

If your pancakes are too thick, perhaps you're simply pouring too much batter? The recipe you copied is the exact one I used, but like I said, I haven't made them in a year and don't remember having any problems... But if I make them again any time soon, I will certainly let you know what I experience.

Of course, there are a million pumpkin pancakes available online, so maybe it would be good to try one of those, but adjust the spices so they're more like the ones in my recipe? Or maybe try using the Martha Stewart recipe I loosely followed? Hers look pretty thin: http://www.marthastewart.com/article/pumpkin-pancakes?autonomy_kw=pumpkin%20pancakes&rsc=header_1

Sorry I can't be of more help, but I do remember loving these pancakes.

Good luck!

Pumpkin is yum. I tweaked your recipe just a wee bit with 1 t vanilla, 3/4 C raisins and 1/2 C glazed pecans. I top mine with just the barest whiff of whipped cream.
