Quick salad (and a great new salad dressing)

Just a little salad I tossed together for dinner that consisted of:
• Baby spinach
• Grilled chicken,seasoned with salt and pepper
• Leftover white rice from dinner the previous night
• Grilled steak mushrooms, roughly chopped
• and my new favorite salad dressing, Newman’s Own Parmesan and Roasted Garlic (which I most certainly recommend!)

I really wasn’t sure what I was doing, all I knew was that I was tired of throwing food away that I forgot I purchased, so I decided to rummage around the fridge to see what I could find. To my surprise, I whipped up a nice, hearty, and earthy dinner that I will for sure be making again. I love it when this happens!

    I’ve never tried that particular Newman’s dressing, but I’m the #1 super fan of their light Balsamic Vinaigrette. I use it almost daily.

    You need to come up with more stuff like this for us single bachelors learning how to cook for the first time. I can now add this to my repertoire of three dishes I can cook – spaghetti, mac and cheese, and this salad (which I will now call the “We’re Not Martha Salad”)
