This recipe was supposed to be completely different than it ended up being. But for me, that definitely wasn’t a bad thing. I really wanted to make this curried egg salad. But it wasn’t until I started making it that I realized I didn’t actually have any curry powder. And then, I realized that all the granny smith apples were gone. Oops. and oops. Since I didn’t feel like running to the store, I had to make lots of changes.
But I still really wanted egg salad, so I figured I’d improvise. I actually really wanted to decorate Easter eggs this year, but just never got around to it. BUT I have so many fabulous ideas for next year (which will likely be here sooner than I think). If you did decorate eggs this year, you’ll need something to do with them and egg salad is the perfect solution. Make the curry one (and make me jealous) or make this one, which was also pretty splendid. Improvise as much as you want!
Egg Salad With Lots of Crunch:
- 1/3 C mayonnaise (I used light)
- 1 T dijon mustard
- 1 T fresh lime juice
- 1 t cayenne
- 1 t paprika
- 1 t garlic powder
- 6 hard-boiled eggs, chopped
- 1 chopped apple (I used macintosh)
- 1/2 C red onion
- 1/2 C celery

First boil your eggs. If you’ve never done this before or just want some fabulous advice, read this little tutorial from Simply Recipes.

While your eggs are being hardboiled, chop up your veggies. Now, there are many different kinds of egg salad, and I love them all. But I really wanted this one to have a lot going on. Sometimes I like egg salad with nothing else involved, but others I want a super nice crunch.
And this egg salad was FULLY loaded. Leave out some of the crunch if you don’t like that. Also, I may have used a tad bit too much onion. It tasted awesome, but whew! to my breath. Just warning you.

Mix the mayonnaise, mustard, lime juice, and spices in a medium bowl. My bowl is clear… I didn’t really just put the mixture on the counter!

Add your vegetables and chopped egg to the bowl.

And stir it all up. OMG I love egg salad SO much. Ahem, sorry.

I decided to make sandwiches with the egg salad. I toasted some nice whole wheat bread, put some lettuce on it, and topped with the egg salad.

Look at all that crunch!

This would have also been wonderful as an open-faced sandwich. Or even just eaten as a salad without any bread at all. Very Atkins friendly, right?

I think egg salad is one of my favorite things ever and I just don’t get how people don’t like it… Or eggs in general. I really need to get Chels to take me back to Bread and Chocolate in Newton because they make one of the best egg salad sandwiches ever, on brioche.
I definitely don’t eat egg salad very often, but when I do, it’s such an awesome little treat and I savor every moment of it.

I cannot remember the last time I had egg salad. That looks fantastic and I have to admit, curry powder and I are not huge friends so I think this looks even better.
I love egg salad! I will definitely be making it with all of our leftover colored Easter Eggs. My favorite Easter candies are Caramel Cadbury Eggs. (They must be the favorite of lots of people because CVS was sold out of them on Saturday!)
That egg salad looks great, and what a fantastic way to use up eggs leftover from Easter! My favorite Easter candy are the Cadbury Mini Eggs, or the Reese’s Peanut Butter eggs.
I love egg salad! It’s such a sandwich classic. I think you either love it or hate it. But I love it! And, my mom used to make me egg salad sandwiches out of the colored Easter eggs. Sometimes, the egg whites would have some Easter egg coloring on them, and it would make my egg salad very pastel-y! I loved it! My favorite Easter egg candy are those Reese’s PB eggs. I can’t resist!
I LOVE egg salad too! I feel like they are so many haters out there, from back in the “Bring your lunch to elementary school and it smells kinda bad” days. But really, eggs salad is amazingly fresh and tasty! I never thought of putting the “crunch” in, but now I’ll have to try it!!
