MMmmmmm feta! Love it. I also love un-boring salads. If I’m going to eat a salad for lunch or dinner, it has to be loaded with flavorful & filling extras, such as hummus, hard-boiled eggs, edamame, avocado, whipped cottage cheese, beans, etc . I actually just posted a “colorful” quinoa recipe as well! Gotta love all of those gorgeous veggies.
