As promised, the doughnut experimentation has begun in my kitchen! As I was walking out of Crate and Barrel a while ago, I saw the book Doughnuts: Simple and Delicious Recipes to Make at Home . The images on the cover tickled my fancy and I started flipping through the pages. Then I started drooling. Then I found myself taking my wallet out of my purse in a zombie-like state and purchasing said publication. Because who wouldn’t want to make their own doughnuts in the privacy of their own home? Side note: As I just typed “doughnuts” I accidently typed “doughbuts”… no joke! Which is most likely what will happen to me if I make every recipe in the book

So, as I was skimming the book, I noticed so many of the recipes really were simple-sounding and I figured since I’ve never really made my own doughnuts before, this was probably the best book to start with. For my first recipe out of the book, I decided I should stick with something basic so I can feel confident experimenting as the days go on. Knowing how a baked homemade doughnut should taste is great grounds for building more unique types. Since I purchased a doughnut pan with the cook book, I decided to start with the basic Baked Cake recipe. It’s done in about 30-minutes… so quick for such a tasty treat!

Here’s what you need (for 6 doughnuts):

• 3/4 cup plus 1 tablespoon of all-purpose flour
• 1/4 cup whole wheat pastry flour (bought at Whole Foods)
• 1 teaspoon baking powder
• 1/3 cup superfine sugar
• 1/2 teaspoon freshly grated nutmeg
• 1/2 teaspoon salt
• 2 tablespoons unsalted butter
• 1/4 cup whole milk
• 1/4 cup plain yogurt
• 1 teaspoon vanilla extract
• 1 egg
Here’s what you do:
• Preheat oven to 350 degrees and lightly grease a doughnut pan.

• Sift the flours and baking powder together in a bowl.

• Whisk in sugar, nutmeg, and salt. Now, using your fingers, incorporate the butter.


• Add the milk, yogurt, vanilla, and egg. Stir until everything is just combined, making sure not to over-mix.
Now it’s time to fill the donut pan!



• Using a piping bag, or in my case, a make-shift piping bag by snipping the corner of a zip-lock bag, fill each section of the doughnut pan, being careful to leave the center posts cleared. We want perfect little doughnuts, here

• Bake until doughnuts are lightly golden or springy to the touch, about 8-10 minutes. I was waiting for the doughnuts to get a bit more golden but when I tested them, they were already quite springy so I took them out since I didn’t want to over-bake them.
• While the doughnuts are baking, you can quickly make your glazes. I chose to do a basic sugar glaze and a maple glaze.

For the Basic Sugar Glaze, here’s what you need (feel free to cut in half, or even quarter it, if you’re only making 6 doughnuts):
• 1 1/2 cups confectioners’ sugar
• 3 to 4 tablespoons milk (or water)
• 2 teaspoons vanilla extract
For the Maple Glaze:
• 1 1/2 cups confectioners’ sugar
• 2 tablespoons maple syrup
• 2 tablespoons milk (or water
I’m out of control and used regular sugar instead of confectioners’ because I wasn’t paying attention and was rushing around. But really, I was just excited to be baking doughnuts and I spaced out. Despite the big goof, the glazes still tasted really good. Now you know where we get the name of our blog from… clearly not a Martha move
For both glazes, place the sugar in a bowl and slowly add in the other ingredients until everything is incorporated nicely and the glazes look pourable.

Once the glazes are done and the baking of the doughnuts is complete, let the doughnuts cool a bit while still in the pan. Once cooled, you can begin dipping each one into the glazes.
OOOOOOH and AHHHHH over these beauties for as long as you’d like. My guess is that won’t be too long because you’ll want to just dive right on in. I did. One maple glazed and one sugar glazed were devoured in a matter of moments. The thing I liked best about the baked doughnuts it’s they’re “healthier” (hehe) and the consistency of them is sort of cakey… unlike a fried doughnut.



As I was dipping the doughnuts in the glazes all I could think about is the sudden desire to host a doughnut-making party. How much fun would that be? Everyone could make their own glazes and combinations. Who wants to come over?!?!

My fave doughnut is very simple, a basic glazed. There are only two/well three places where I will eat them. 1) Krispy Kreme 2) Sublime/Cypress Street Pint & Plate (those go together because Cypress Street sells Sublime doughnuts, but they lightly grill them and serve them with ice cream)…simply divine

Being a Dunkin Junkie myself, the Boston Creme are my favorite! Got a chuckle out of the Jimmies reference. A tell tale sign of a Bostonian. I’m met with blank stares when I ask for them on my ice cream.
Krispy Kreme will always hold a special place in my heart! I’d love to try to replicate it using some of the recipes in this cookbook!
I remember Doherty middle school having dunkin donuts/bagels day every Friday. I used to get so excited….especially when it was near a holiday and they had the donuts with the extra sugary pieces on top. Your donuts look just awesome. Especially with that glaze. My favorite donut now? I like the simple old fashioned donuts.
I don’t buy doughnuts anymore because of my hips and thighs but I could totally go for a baked version. Especially homemade. Especially covered in glaze. And sprinkles. Sprinkles are the key to happiness.

Mmmm… I love those apple filled doughnuts with the cinnamon-powdered sugar on the outside! They are so good, especially when they are still a little bit warm.
Favorite regular doughnut is Boston Creme but I will always love the greasy sugar covered doughnuts from Paynes Dock cafe on Block Island. Two of those oil bombs would keep your stomach full for the rest of the day! Ah, childhood memories
Maybe not a true donut but my favorite is the coffee roll donut – swirled with cinnamon and sugar. One from Dunkins will do in a pinch but the ones from Donuts With a Difference in Medford, MA are amazing.

Well, it is no coinsidence that we have the same favorite doughnut. Without any doubt in my mind, the BEST doughnut is glazed with strawberry frosting and rainbow sprinkles. yes, the one at DD is amazing and on Valentine’s Day when they had it in not only heart shape but ALSO with creme filling I immediately drooled. I had to travel to 3 different DD’s to get it, and I did not got one. THOUGH, as as surprise a few days after Vday my boyfriend came home with one and I almost cried. In my home town in CT thereis a great bakery called Elmwood Bakery and they have the ULTIMATE jelly doughnuts. When my father and I bet on something, the prize is always a jelly donut from Elmood Bakery.

The greatest doughnut if all time is the peanut doughnut, which can only be found in Western New York (where I grew up). I have never seen it anywhere else and no one outside of WNY has ever even heard of it! It’s a glazed doughnut with chopped peanuts on the outside and it is tremendous.
My favorite doughnut is the Boston Cream doughnut. It’s a game changer, whenever I’m having a truly awful day – I go out, get one, take a deep breath and carry on.

In college, I studied in Luxembourg and went to Berlin to visit a friend for a few days. She had to work part of the time, so left me to do my own thing. I was coming up the escalator from the u-bahn, when I saw a Dunkin Donuts. The New Englander in me did a little jig and went I went inside, I saw that they had a Boston Kreme..spelled just like that! I nearly cried. It was the best doughnut I’d ever had, and I still have a special fondness for B.K.’s because of that!
(I’d like to point out that while abroad, I tried to avoid the American chains, but I was feeling especially homesick that day!)

We have a locally owned chain Kempf’s Donut Bank – they make many wonderful doughnuts. My favorites include the cinnamon crumb, vanilla cake, red velvet cake, or a cherry/raspberry jelly filled. Their honey glazed yeast is tasty also – I see a doughnut run in the near future.
Long Johns…not really sure where the name originated but its the long eclair like doughnut filled with creme or custard and topped with chocolate! Delicious!

I have two favorites and they come from opposite ends of the spectrum. The first favorite is the cinnamon twist; a light-as-air sweet and spicy piece of fried dough heaven. The second favorite is a chocolate dipped old fashioned; a beautiful cake dough style donut with a chocolate coating that sticks to the roof of your mouth like peanut butter. I could eat a dozen of either with a good cup of coffee to wash it all down.
I grew up eating yeast doughnuts [Krispy Kreme], but since moving to NYC, Doughnut Plant’s Carrot Cake donut has turned me to the cake doughnut side!

Are all the recipes in the book for baked donuts? My favorite one is Dunkin Donuts boston cream pie donut. They also used to have this one filled with blueberry preserves, but they stopped making them. When we moved to the US, my dad would buy a dozen donuts every Saturday morning so I was lucky enough to taste each one, many times over!
Hands down, my favorite donut is made on Martha’s Vineyard, at a place called Back Door Donuts that opens at 10pm at night — their apple fritters are TO DIE FOR.
