Cucumber Collins

This past Saturday night my friend Kate invited me to a party her boyfriend’s friend was hosting. Upon my arrival at the party, Michael P, the host, served me a Cucumber Collins. I’d never had one before, but any man who has a “signature drink” at his party is AOK in my book and I will gladly accept said beverage. After just a couple sips, I knew I’d be making this drink multiple times a week for the rest of the summer! It was by far one of the most simple and refreshing cocktails I’ve had.

Cucumber Collins (serves 1)

  • 1 ounce freshly squeezed lemon juice, from about 1 lemon
  • 1 ounce simple syrup
  • 2 ounces gin
  • 5 slices of cucumber
  • club soda, to top off
  • mint, to garnish

In the bottom of a glass, muddle the cucumber, lemon juice, and simple syrup. I don’t know why I don’t own a muddler, but the handle of a wooden spoon worked just wonderfully!

Muddle away until the cucumbers are a bit crushed and the juices have released.

Get a lil’ crazy. Without wearing makeup, of course. Eep.

Add gin into the glass along with several ice cubes and shake, shake,

shake.

Pour back into glass with fresh ice cubes and top with club soda.

Once the drink was strained and poured in the glass, I decided to dump the cucumbers and “roughage” in as well because, to me, nibbling on alcohol-soaked produce is a hobby ;)

Easy to sip, crisp, light, and refreshing, a Cucumber Collins will surely become your go-to summer drink as well! Plus, it’s probably one of the easiest ways to beat the heat, too :)
